MARBLE CAKE
In a mixing bowl, combine the softened butter and the sugar. Beat to a creamy consistency. Add the eggs one at a time, stirring until smooth. Add the sifted flour and baking powder to the mixture, blend well, using a spatula. Take a small half of the batter, mix in another bowl with 2 large tablespoons of sugar free cocoa powder. Add the lemon zest to the first mixture. Butter a ring mold. Pour a third of the white batter into the mold, cover with half of the chocolate batter, without stirring, add another third of white batter, then the rest of the chocolate batter and top with the remaining white one. Bake in a hot oven (400 F) for 40 to 45 minutes, keeping an eye on the coloring. It is ready when a knife comes out clean. Unmold still hot onto a rack. The cake hardens if overcooked.
